I made a duck for dinner one evening last week. Roasting a duck, however, leaves one with a lot of rendered duck fat. I made fried green tomatoes using it. They were delicious.

We had a ton of tomatoes this year… as we always do, but they were late ripening so Grizzled asked me to make some fried green tomatoes saying he had never had them. Trying to be health-conscious, I made them with canola oil… they were missing that umami that bacon grease brings… it then dawned on me that I was going to be making duck… and ducks are known for their fat… and if Hot Doug’s french fries fried in duck fat were good, fried green tomatoes using duck fat would be good... plus it's not as bad for you as bacon. Yes, I'm justifying. :)

Stop! Why is it I have no problem roasting a chicken, but roasting a duck... makes me feel guilty. It was, however, delicious.

True! I never sympathized with Foghorn Leghorn, I say, I say! Although... Baby Huey bugged the crap out of me.... >:( I think he was a duckling.

I actually had some amazing Peking Duck on Friday.
Foghorn Leghorn was kind of a fatty, which means he would have been delicious.
